Wild Greens Salad Dressing (from Cook's Garden Recipes)
This highly praised dressing can be used on any green salad, including any wild greens you gather. Stores well in a salad dressing bottle you've saved from a store-bought dressing. Decorated with your own label, these make sensational gifts because everyone thinks it is delicious as a spread or dip as well as a dressing.

1 cup olive oil
1/4 cup balsamic vinegar
1 Tablespoon tamari (or soy sauce)
1 Tablespoon honey
2 cloves garlic, peeled and smashed
1 Tablespoon brewer's yeast (or nutritional yeast), available from any health food store.
1 Tablespoon fresh thyme
1 Tablespoon Dijon style mustard

Place all ingredients in a blender. Whir until completely smooth.. Stores for 1 month in refrigerator. Toss over washed greens as desired.
